If you are using a MacOS computer, this might be a known issue with DJI Assistant 2. You can use it normally on Windows.

Is it purely an OS issue. Should it work running Windows on a macbook pro?

Running the simulator on DJI Assistant 2 on a MacBook Pro can allow the Mavic 3 Enterprise to take off, provided that you ensure the simulator is open. This way, you can ignore the "Running Simulator. Unable to takeoff." message. However, the warning about not having an SD card inserted on the aircraft is due to differences between the MacOs and Windows systems, and we currently do not have a solution for this issue.
